Chamorro Cuisine to Feature in "Off the Eaten Path" Event

This month, Prince Waikiki’s signature restaurant 100 Sails is hosting another rendition of its quarterly event, “Off the Eaten Path” with the theme of “Pacific Fiesta: Celebrating Chamorro Cuisine“. The event will be led by 100 Sails’ executive chef and Guam native, Joseph Almoguera, who has not only developed the menu but will have also sculpted the Kelaguen Ice Bar centerpiece himself. Apart from at 100 Sails, you can find Chef Almoguera on Instagram @almoguerajoe, where he displays dishes and the fresh produce harvested from the hotel’s rooftop garden.

Tickets are $105 per person inclusive of tax and gratuity. Complimentary self and valet parking available based upon availability. Tickets are available online.

This event, entitled “Pacific Fiesta: Celebrating Chamorro Cuisine” will feature an exciting night of interactive chef stations inspired by the manngue (enjoyed, relished) flavors of Chamorro cuisine. Menu highlights include a Kelaguen Ice Bar featuring Uhuang (Kauai Shrimp), Gamson (Octopus), Binadu (Venison) and Titiyas (Flatbread with Coconut Milk); Chalakiles (toasted rice soup); Tinala Katne (Smoked Beef Belly) with Crab Fat Finadene Dinanche; Bonelos (Guam donuts); a Guam-inspired cocktail using tuba, created from fermented coconut tree sap; and more.
